Chocolate Fudge Cake (serves 12)

We’re knees deep in menu planning for this winter at Tasty HQ and it’s cake day. Our chocolate fudge cake is a real guest favourite which we like to spruce up with the addition of maltesers, kinder bueno and strawberries for birthdays. It is a serious indulgence with a super moist cake mix and ultra oozing icing.

Cake Mix

9 inch cake tin
260g self-raising flour
3tbsp cocoa flour
225g caster sugar
1/2tsp baking powder
3 beaten eggs
225g vegetable oil
225g milk
3tbsp maple syrup

Chocolate Fudge Cake Recipe
Preheat oven to 180 degrees. Grease the bottom and sides of the cake tin and then line the bottom of the tin with grease proof paper. Sieve the flour, cocoa and self-raising into bowl. Add the sugar and mix.
Make well and add the beaten eggs, oil, milk and syrup. Add to the tin and put in oven for approx 40 minutes until knife comes out clean. Remove from tin and let cool. Cut in half then add icing and toppings.

Icing + Topping

300g icing sugar
150g diced softened butter
3tbsp cocoa powder

Beat the icing sugar and butter until pale and fluffy. Beat in the cocoa powder. Add a little milk if not pliable enough. Add the maltesers + kinder bueno + strawberries with a decorative flourish!
